Healthy & Nutritious Recipes For Pesach
Passover Spinach Squares
Ingredients
- 1½ pounds fresh Spinach (stemmed and washed)
- 1½ tsp Canola Oil
- 1 Leek (white part only, thinly sliced)
- 2 cloves Garlic (minced)
- 2 tsp Lemon Juice
- ¾ tsp dried Oregano
- 1/8 tsp Black Pepper (ground)
- 3 Egg Whites
Instructions
- Preheat oven to 350 °F.
- Grease an 8x8 inch baking dish.
- Boil some water in a large pot.
- Add spinach and cover the pot. Cook for about 5 minutes till the spinach has wilted on medium flame.
- Remove the spinach and squeeze out the water.
- Chop the spinach and transfer to a large bowl.
- Heat canola oil in a small skillet on low flame.
- Add leek and garlic. Sauté for 10 minutes till they are tender.
- Remove and transfer to the bowl of spinach.
- Add in lemon juice, oregano and black pepper. Mix well.
- Beat the egg whites in another bowl using an electric mixer till they turn foamy.
- Add the egg whites to the spinach mixture.
- Pour the mixture into the greased pan and bake it for about 35 minutes until cooked.
- Remove the pan from oven and allow the mixture to cool slightly.
- Thereafter, cut into squares and serve warm.
Roasted Sweet Potatoes with Balsamic Drizzle
Ingredients
- 1½ pounds Sweet Potatoes (peeled)
- 1 tbsp Extra-Virgin Olive Oil
- ¼ tsp Salt
- Pepper (freshly ground, to taste)
- 1 cup Balsamic Vinegar
- 2 tbsp Honey
- 1 tsp Butter
Instructions
- Preheat oven to 425 °F.
- Line a baking sheet with foil.
- Chop the sweet potatoes into ½ inch thick wedges.
- Place them on the baking sheet.
- Drizzle olive oil and toss gently.
- Separate the sweet potatoes and place them in a single layer.
- Bake them for 25 to 30 minutes until tender when pierced with a knife.
- Add salt and pepper to taste.
- Place a small saucepan on fire and mix balsamic vinegar with honey.
- Boil the mixture on medium-high flame and continue cooking for about 12 to 15 minutes till it reaches a syrupy consistency and reduces to 1/3 cup.
- Add in the butter and remove from heat.
- Drizzle the sauce over the sweet potatoes.
- Serve warm.
