Kugel Recipes For Pesach
Pineapple Kugel
Ingredients
  • 6 Eggs
  • 1 pkg Wide Egg Noodles
  • ½ cup White Sugar
  • 5 tbsp Butter (unsalted, melted)
  • 1 tsp Cinnamon (ground)
  • 1¼ tsp Vanilla Extract
  • 1 can crushed Pineapple (with juice)
  • ¼ cup Candied Cherries (optional)
  • 1 can sliced Pineapple (drained)
Instructions
  • Boil the water and salt required to cook the egg noodles.
  • Add the egg noodles and cook them until they become tender.
  • After this, drain the egg noodles and keep them aside.
  • Take a large mixing bowl, and blend eggs and butter until they are mixed perfectly.
  • To this add white sugar, crushed pineapple with juice, cinnamon and vanilla extract and mix well.
  • Now add egg noodles and stir continuously.
  • Transfer this mixture in to a greased 9 x 13 inch baking pan.
  • You may decorate the mixture by placing pineapple rings closely and place a cherry in the center of each pineapple ring.
  • Bake this mixture at 350°F for about 50 minutes until it turns golden.
  • Serve hot.
Cheesy Potato Kugel
Ingredients
  • 4 Eggs
  • 2½ cups Cheddar Cheese (shredded)          
  • Pepper (to taste)
  • 1 Onion (chopped)
  • 3 lbs Potatoes (peeled and shredded)
  • Salt (to taste)
  • 5 tbsp Olive Oil
Instructions
  • Preheat oven up to 350°F.
  • Grease a 9 x 5 inch loaf pan.
  • Place the potatoes in a sieve and squeeze out the moisture.
  • Take a large mixing bowl and blend eggs, salt, pepper, olive oil and onion perfectly.
  • To this, add potatoes and cheddar cheese. Stir well to blend the mixture.
  • Move the mixture to the greased loaf pan.
  • Bake the mixture for about an hour.
  • Increase the temperature of the oven to 450°F and bake it for another 5 to 10 minutes until brown.
  • Remove and serve hot.
Carrot Kugel
Ingredients
  • 2 tsps. Vanilla
  • 8 medium Carrots (shredded)
  • 4 Eggs (separated)
  • 1 tsp Baking Powder
  • 1 cup Honey
  • 1/3 cup Oil
  • 2 cups All-Purpose Flour
  • 4 tsp Lemon Rind (grated)
Instructions
  • Preheat oven to 350°F.
  • Grease a baking pan of your choice: loaf pan, muffin pan or bundt pan.
  • Place the carrots in a food processor and grind them finely.
  • Remove into a large mixing bowl.
  • Add egg yolks, oil, honey, vanilla and lemon rind. Mix well.
  • Mix flour and baking powder in another bowl.
  • Add the flour mixture to the carrot mixture. Mix well.
  • Beat egg whites in a separate bowl until they form stiff peaks.
  • Gradually add the egg whites to the carrot mixture.
  • Mix well and pour the mixture into the greased pan.
  • Bake for about 20 to 25 minutes if you are using muffin pans, 35 minutes for loaf pan and 45 minutes for bundt pan.
  • Serve hot.
Cottage Cheese Noodle Kugel (Dairy)
Ingredients
  • 4 tbsp Melted Butter
  • 16 oz Broad Egg Noodles
  • 1/2 cup Sugar
  • 4 Eggs (beaten)
  • 1 lbs Sour Cream or Israeli White Cheese
  • 1 ¼ - ½  cup Sugar
  • 2 tbsps. Vanilla Extract
  • 1 lb Cottage Cheese
  • 2 tsp Cinnamon
  • 1 ½ cup Crushed Cornflakes
Instructions
  • Boil some water and cook the noodles according to the directions in the package. Drain and rinse with cold water.
  • Take a large bowl and mix the cooked noodles with sugar, eggs, vanilla, cheese and butter.
  • Grease a 9 x 13 inch pan and pour the mixture in to it.
  • Mix well cornflakes, cinnamon and sugar in another bowl.
  • Spoon out the cornflakes mixture over the noodle mixture.
  • Bake this mixture for 45-50 minutes at 350oF (180oC). You may check until the top portion is brown in color.
  • Serve hot.
