Kugel Passover Recipes

A traditional Jewish pudding or casserole, Kugel is highly appreciated and preferred on the festive occasion of Passover. The name Kugel has been derived from a German word, which means ‘ball’ or ‘globe’. It is often associated with German Gugelhupf, a type of ring-shaped cake. Initially prepared from egg noodles or potatoes, kugel is now made from apples, spinach, broccoli, cranberry and sweet potato as well. Kugel Recipes For Pesach

Pineapple Kugel

Ingredients
  • 1 (8 ounce) package wide Egg Noodles
  • 6 Eggs
  • 5 tbsp Unsalted Butter (melted)
  • ½ cup White Sugar
  • 1 (8 ounce) can crushed Pineapple (with juice)
  • 1¼ tsp Vanilla Extract
  • 1 tsp Cinnamon (ground)
  • 1 (8 ounce) can sliced Pineapple (drained)
  • ¼ cup Candied Cherries (optional)
Instructions
  • Boil enough water with salt to cook the egg noodles.
  • Add the egg noodles and cook till they turn tender.
  • Drain the noodles and keep aside.
  • Combine eggs and butter in a large mixing bowl. Beat until well blended.
  • Add white sugar, crushed pineapple with juice, vanilla extract and cinnamon. Mix well.
  • Add in the egg noodles and stir.
  • Transfer the mixture to a greased 9x13 inch baking pan.
  • Decorate the mixture by placing pineapple rings closely.
  • Thereafter, place a cherry in the center of each pineapple ring.
  • Bake the mixture at 350 °F for 50 minutes till it turns golden.
Cheesy Potato Kugel

Ingredients
  • 3 pounds Potatoes (peeled and shredded)
  • 4 Eggs
  • Salt (to taste)
  • Pepper (to taste)
  • 5 tbsp Olive Oil
  • 1 Onion (chopped)
  • 2½ cups Cheddar Cheese (shredded)
Instructions
  • Preheat oven to 350 °F and grease a 9x5 inch loaf pan.
  • Place the potatoes into a colander and tighten them to squeeze out the moisture.
  • Take a large mixing bowl and combine together eggs, salt, pepper, olive oil and onion.
  • Add the potatoes and cheddar cheese. Stir to blend the mixture.
  • Transfer the mixture into the greased loaf pan.
  • Bake the mixture for one hour.
  • Increase the oven temperature to 450 °F and bake for another 5 to 10 minutes till it turns brown.
  • Remove and serve hot.
Carrot Kugel

Ingredients
  • 8 medium Carrots (shredded)
  • 4 Eggs (separated)
  • 1/3 cup Oil
  • 1 cup Honey
  • 2 tsp Vanilla
  • 4 tsp Lemon Rind (grated)
  • 2 cups All-Purpose Flour
  • 1 tsp Baking Powder
Instructions
  • Preheat oven to 350 °F.
  • Grease a baking pan of your choice: loaf pan, muffin pan or bundt pan.
  • Place the carrots in a food processor and grind them finely.
  • Remove into a large mixing bowl.
  • Add egg yolks, oil, honey, vanilla and lemon rind. Mix well.
  • Mix flour and baking powder in another bowl.
  • Add the flour mixture to the carrot mixture. Mix well.
  • Beat egg whites in a separate bowl till they form stiff peaks.
  • Gradually add the egg whites to the carrot mixture.
  • Mix well and pour the mixture into the greased pan.
  • Bake for about 20 to 25 minutes in case you are using muffin pans, 35 minutes for loaf pan and 45 minutes for bundt pan.
