Passover Side Dishes

The Jews, in order to mark their freedom from oppression and slavery under the Egyptians over 3000 years ago, celebrate the seven-day Pesach festival. The Pesach festival starts on 15th day of the Nisan month of the Hebrew calendar. The festival is marked with religious fervor and gaiety. Feasting on dishes form a major part of weeklong Pesach festival. The Jew families feast on many types of dishes during family get-togethers, rituals, gatherings and meetings during the Pesach festival. Passover Side Dish Recipes
Pesach Onion Pudding
Ingredients
  • 4 Onions (chopped)
  • 6 Eggs (separated)
  • 6 Egg Whites
  • 1/3 cup Matzo Meal
  • 1½ tsp Salt
  • ¼ tsp Black Pepper
  • 1/3 cup Shortening (melted)
Instructions
  • Place egg yolks in a bowl and beat them well.
  • Add onions, matzo meal, salt, pepper and shortening. Stir to get a smooth mixture.
  • Preheat oven to 350°F.
  • Beat the egg whites in a separate bowl until they form stiff peaks.
  • Add them into the onion mixture and mix well.
  • Pour the mixture into a greased 2-quart baking dish.
  • Bake the mixture for about 40 minutes.
  • Cut into slices and serve hot.
Pesach Cauliflower Fritters
Ingredients
  • ½ cup Matzo Meal/ Flour
  • 2 Eggs (beaten)
  • 1 small Cauliflower
  • Oil (for frying)
  • Salt (to taste)
  • Pepper (to taste)
Instructions
  • Boil the cauliflower to tender.
  • Drain it and mash coarsely.
  • Add matzo meal, eggs, salt and pepper. Mix well to get a smooth mixture.
  • Heat oil in a frying pan.
  • Add tablespoons of the cauliflower mixture and fry on both sides until browned.
  • Remove the balls from oil and drain on paper towels.
  • Serve hot.
Pesach Apple Kugel
Ingredients
  • 1/2 cup Walnuts (chopped)
  • 1/2 cup Potato Starch
  • 6 Golden Apples (peeled and sliced thin)
  • 2 Eggs (beaten)
  • 1/4 cup Oil
  • 3/4 cup Sugar
  • 1/4 cup Orange Juice
Instructions
  • Mix oil, potato starch, eggs and apples.
  • Pour the mixture into a square pan
  • Mix walnuts, sugar and juice in a separate bowl.
  • Pour over apple mixture.
  • Cook at 350oF for about an hour.
  • Serve.
Pesach Leek Pancakes
Ingredients
  • 2 Eggs (beaten)
  • 1 kg Leeks (halved lengthwise and washed well)
  • 30 g fine Matzo Meal
  • Oil (for frying)
  • ½ tsp dried Thyme
  • ¼ tsp Cinnamon
  • Salt (to taste)
  • Pepper (to taste)
  • Lemon Wedges (optional)
Instructions
  • Cook the leeks in boiling water for about 5-7 minutes.
  • Remove and run the leeks under cold water.
  • Chop them finely thereafter.
  • Place them in a clean dishtowel and press lightly to remove any excess liquid.
  • Transfer the leeks into a large mixing bowl.
  • Add eggs, matzo meal, thyme, cinnamon, salt and pepper. Mix well to form a smooth batter.
  • Place a large frying pan on medium-high flame and heat oil.
  • Add spoonfuls of the batter to the hot oil.
  • Fry the pancakes for about 2 minutes till the underside turns brown. Flip over and fry for another 1 minute.
  • Remove and drain on paper towels.
  • Repeat with the remaining batter.
  • Serve hot along with lemon wedges.
