Pesach Cookie Recipes
Chocolate Chip Cookies
Ingredients
  • 1½ cup Matzo Meal
  • 1 cup Bittersweet Chocolate Chips
  • 1½ cup Matzo Farfel
  • 1½ cup Sugar
  • 1 cup Raisins
  • 1 tsp. Cinnamon
  • 1 cup Walnuts
  • 3 Large Eggs
  • 2/3 Cup Vegetable Oil
Instructions
  • Take a large bowl and mix all the ingredients init, leaving the egg and oil.
  • In a different bowl, put the eggs and oil, and mix them properly.
  • Mix all the ingredients together, making dough out of the mixture.
  • Take a cookie sheet and grease it well. Place cookies on the sheet.
  • Preheat oven to 350 degree F.
  • Put the sheet in an oven and bake for 15 minutes.
Vegan Cherry-Chocolate-Oat Chippers
Ingredients
  • 1/3 cup Oil
  • 1 cup Brown Sugar
  • 1/4 cup Applesauce
  • 1/2 tsp. Baking Powder
  • 1/2 tsp. Vanilla
  • 1 cup All-Purpose Flour, unbleached
  • 1/2 tsp. Baking Soda
  • 1 cup Quick-Cooking Rolled Oats
  • 1/4 tsp. Salt
  • 2/3 cup Semi-Sweet Chocolate Chips
  • 1/3 cup Dried Cherries
Instructions
  • Make a smooth mixture, beating oil, brown sugar, applesauce and baking powder together.
  • In a large bowl, sift the flour and baking soda together. Add oats, salt, chocolate chips, and cherries, mixing well.
  • Add the wet ingredients to the above mixture and stir it gently.
  • Line the cookie sheet with wax paper.
  • Leaving a space of 2 inches between each of the cookies, drop a rounded tablespoon of the mixture onto sheets.
  • Preheat oven to 350 degree F.
  • Place the sheet in the center rack of the oven and bake for 10-12 minutes.
White Chocolate and Cranberry Oatmeal Cookies
Ingredients
  • 3/4 cup Butter, Softened
  • 1 cup Brown Sugar
  • 1/2 cup Sugar
  • 1/4 cup Low-Fat Milk
  • 1 Egg
  • 1 tsp. Vanilla
  • 1 cup Flour
  • 1 tsp. Cinnamon
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 3 cups Rolled Oats
  • 1/2 cup White Chocolate Chips
  • 1/2 cup Dried Cranberries
Instructions
  • Combine butter, sugar, milk, egg and vanilla in a large bowl.
  • In a separate bowl, whisk together flour, cinnamon, baking soda and salt.
  • Add flour mixture to butter mixture and mix for some time.
  • Gradually add oats to the mixture, followed by chocolate chips and cranberries.
  • Take a cookie sheet and grease it well.
  • Drop oatmeal dough onto the sheet, with the help of a tablespoon.
  • Preheat oven to 350 degree F.
  • Place the sheet in the oven and bake for 10-12 minutes.
Passover Orange Ginger Sugar Cookies
Ingredients
  • 3 cups Matzo Cake Meal
  • 12 to 13 tbsp. Passover Margarine (unsalted and kept at room temperature)
  • 2 Egg Yolks
  • 1 cup Sugar
  • 2 tbsp Potato Starch
  • 1 tbsp Ground Ginger
  • 2 tbsp Fresh Orange Juice
Instructions
  • Preheat the oven to about 375°F.
  • Blend potato starch and sugar in the food processor.
  • Add margarine, cinnamon and ginger in potato starch and sugar paste. And mix it thoroughly.
  • Slowly add the matzo flour, pulse and mix it until all the flour combine together to form dough.
  • Shape the dough into small balls and roll them in the sugar.
  • Place each cookie on a parchment-lined cookie sheets and start pressing each of them with the bottom of a measuring cup.
  • Place the cookies in the oven and bake it for complete 15 to 20 minutes. Do not over bake your cookies; else, they will taste bitter.
  • Remove it from the oven and allow it to cool along with parchment paper cover.
